Virginia’s Molasses Cookies


 

Ingredients


  • ¾ cup shortening (1 stick margarine + ½ stick butter works well)

  • 1 cup sugar

  • ¼ cup heaping molasses

  • 1 large egg

  • 2 teaspoons baking soda

  • 2 ¼ cups all-purpose flour

  • ¾ teaspoon ground cloves

  • ½ teaspoon ground ginger

  • 1 teaspoon cinnamon

  • ½ teaspoon salt

Instructions


  1. Cream together the shortening and sugar in a large bowl.

  2. Add the molasses and mix well.

  3. Beat in the egg until smooth.

  4. In a separate bowl, sift together flour, baking soda, salt, and spices.

  5. Gradually add the dry ingredients to the wet mixture and stir until combined.

  6. Form dough into 1-inch balls and roll each ball in sugar.

  7. Flatten slightly with the bottom of a juice glass dipped in sugar and place 2 inches apart on a greased cookie sheet.

  8. Bake at 350°F (175°C) for 8–10 minutes, until set but still soft.

  9. Remove immediately to cool on paper towels or wire racks.
